roasted red peppers
this is one of my mom's best recipes because it's simple, the flavour is so strong, and i love the innovative manner of steaming!
take a red pepper or three
put tinfoil on a broiler
wash the peppers leave 'em whole
put the peppers in the oven - top of pepper 2 inches from broiler.
watch them close as each pepper-side blackens,
turn until all have been a visibly heated
then put the pepper(s) in a brown paper bag,
fold the bag and leave them sit
after some time they've steamed their own skins mostly off!
finish the job, peel into strips,
resist the temptation to rinse them - leave them tasty juices on!
serve maybe sprinkled with a little feta.
