cuban sweet potatoes

Sweet potatoes! Mom probably got this out of a magazine or cookbook herself, but anyhow, she shared it with me. I like this as an alternative to the usual insane butter and sugar topping I encounter most often on Sweet Potatoes. That sure tastes good; this is a bit more subtle.

Cut sweet potatoes into 1.5 inch thick rounds.
brush top and bottom with olive oil
on a cookie sheet, bake at 375 for one hour or 1.25 hours

Make a dressing for each potato round:

one tbl olive oil
.5 tbl lime juice
chopped cilantro
pressed garlic

Serve each person one or two potato rounds.
